A CONJOINT ANALYSIS OF NEW FOOD PRODUCTS PROCESSED FROM UNDERUTILIZED SMALL CRAWFISH AgEcon

Attributes for two value-added seafood products derived from underutilized crawfish are analyzed using conjoint data from seafood restaurants in the southern region of the United States. Preferences for the products' form, price, and flavor attributes were tested. Statistical tests revealed that the attribute interactions were not significant, and part-worth utilities for all main effects were estimated using an additive preference model. Results indicate that the new crawfish products should be marketed as a high-quality fresh soup base or seafood stuffing, priced between 30% and 50% of the cost of fresh crawfish tail meat.

A review of traditional Hungarian products’ reputation with a special focus on consumer behaviour AgEcon

The quality of traditional and regional products is essentially determined by geography, history and culture. Being protected by a distinctive quality label (based on the geographical origin, traditions and special features) may enhance traditional Hungarian and regional products’ competitiveness. Based on our survey’s questionnaire results (N = 425) (basic statistics, factor and cluster analysis) it can be proved that consumers are able to identify and appreciate Hungarian products. They also highly value traditional quality.

This paper empirically investigates the determinants of firms’ performance in the agri-food sector by using recent survey data for Denmark. Treating sales per employee as a proxy for value addition we estimate several bootstrapped regression models to draw conclusions on the marginal effects of potential performance determinants such as the form and nature of ownership, stage of the food chain and commodity sector, new product development, staff quality, firms’ competitive stance, and elements of firms’ strategy. Discussion: Economic Sustainability of Rural Areas AgEcon

The three articles in this invited paper session examine value-added strategies related to agriculture and food at the state and federal level designed to enhance rural development. Two of the papers dealt with the GO TEXAN program and the other with organic agriculture. All three papers were well written and interesting, but all three also shed light on the problem of using classical economic theory to interpret differentiated agriculture and food products as opposed to undifferentiated commodities.

Launched ten years ago, the biennial publication of the French Maritime Economical Data (DEMF) analyses French maritime activities in their diversity. It assesses their economical importance based on a number of indicators updated on a regular basis. This synthesis of the DEMF 2007 draws the main aspects of the French maritime activities in the form of sectorial index cards providing production, employment and budget data over recent years. The "merchant" sector includes the exploitation of marine resources, the manufacturing and services. The public sector includes Navy, public action, education, coastal environment protection and marine research.

Environmental and Quality Improvement Practices: Their Analysis as Components of the Value Added in Horticultural Firms AgEcon

This paper analyses the effect of environmental and quality improvement practices on the value added of the fruit and vegetable sector. These practices form part of the incentive-based programmes established by the Common Agricultural Policy. Taking the investment in quality-environmental activities as knowledge capital, we propose a specific analysis that evaluates the effect of the factors of the production function and of the current subsidies over the value added. Federal, state and local governments have funded various efforts to support value added agriculture, often implicitly assuming that the enterprises would be profitable and that the transition from commodity producer to producer-processor-marketer-distributor would be relatively easy. Some analysts (e.g., Streeter and Bills; 2003a, 2003b) have questioned both of these assumptions, noting that available aggregate data do not allow assessment of the financial performance of value-added enterprises. The report presents a survey of marine related activities in France and an assessment of their economic weight in terms of value added and employment estimates. A brief outline of the recent past and present economic situation of these activities, and of their position on international markets is given. The survey presents the commercial sector, including marine resource exploitation, manufacturing activities and services, followed by the public sector, including the Navy, state intervention at sea, coastal environment protection and marine sciences. GENETIC INFORMATION IN AGRICULTURAL PRODUCTIVITY AND PRODUCT DEVELOPMENT AgEcon

A prominent facet of recent changes in agriculture has been the advent of precision breeding techniques. Another has been an increase in the level of information inputs and outputs associated with agricultural production. This paper identifies ways in which these features may complement in expanding the variety of processed products, the level of productivity, and the rate of change in productivity. Using a martingale concept of "more information," we identify conditions under which more information increases the incentives to invest and engage in product differentiation. A theory on how genetic uniformity can enhance the rate of learning through process experimentation, and so the rate of technical change, is also developed.

Agricultural production is becoming more like manufacturing in the routinization of processes, the extent to which raw materials are processed, capital intensity, and its emphasis on throughput. Some ascribe the changes to demand-side factors while others look to technological innovations. Emphasizing cost seasonality as a reference indicator for nature's role in agricultural production, this paper develops a simple model that includes both supply and demand sides. The general objective of this paper is to present the inner connections of the broiler product chain and the process of value generation in the economic situation of 2007. Value added and governance structure: Evidence from the pear industry in China’s Zhejiang province AgEcon

Traditional farmer cooperatives, new generation farmer cooperatives, and investor-owned firms (IOFs), are compared regarding their value added and value added rate in terms of product marketing. The results of the analysis regarding the pear supply chain in Zhejiang province in China indicate that IOFs obtain a higher value added or value added rate than farmer cooperatives. New generation cooperatives mitigate the under-investment problem of traditional cooperatives in a certain extent. However, farmer cooperatives have some advantages over investor-owned firms in benefiting farmers.
